Welcome to the taste of Alaska!

Founded in 2003, Absolute Fresh Seafoods is a unique family owned and operated commercial processing plant located on the pier at Fisherman Quay in Sitka, Alaska.

Jeffrey Olsen, a fish broker and experienced Alaska fisherman, dreamed of combining a commercial processing plant with a fish market that could provide Hook-and- Line Troll-caught Wild Alaska Salmon and other seafood to both retail and wholesale customers all across the U.S.

Jeffrey's family has been involved in the commercial fishing industry since 1959. Once his parents, Knud and Shirley Olsen, learned of his dream, they immediately realized that their son's idea was about to revolutionize the way Alaska seafood had traditionally been marketed. The Olsens and their two other children, Heidi and Garrett, immediately joined in to help make Jeffrey's dream become a reality.

A commitment to quality and freshness

Absolute Fresh Seafoods is located in Sitka's harbor, home to the largest hook-and-line fishing fleet in Alaska. The fishing boats ply the icy, crystal-clear waters of Southeast Alaska where some of the finest King and Coho salmon in the world are caught one at a time, cleaned and iced immediately to maintain their flavor and texture.

The centerpiece of Absolute Fresh Seafoods is its state-of-the-art commercial processing plant. It differs from other fish processing facilities due to its ability to purchase and process both small and large catches of fish. Besides salmon, the plant processes Halibut as well as Red Snapper (also called Yellow eye) and Ling cod, when available. The adjoining Fish Market also offers Alaskan King Crab, Spot prawns and Scallops.

Absolute Fresh Seafoods prides itself on providing personalized service from the moment the fish enters the processing plant until it reaches its ultimate destination. Within hours after leaving the boat, fish is on its way by Alaska Airlines to wholesale customers across the U.S., where it is proudly offered at restaurants and specialty markets.

Now a year-round resident of Sitka, Jeffrey concentrates on fish buying and wholesale markets. His parents, Knud and Shirley, focus on the day to day operations of the processing plant. Jeffrey's sister Heidi tends to retail marketing and advertising. Knud also operates the F/V Heidi Linea while his other son Garrett operates the F/V Absolut.

Retail and Sport-fishing services

Sitka hosts over 300,000 visitors a year as a result of growing tourism from the cruise ship and sport-fishing industries. Cruise passengers can visit Absolute Fresh Seafoods' Fish Market or order online to arrange for seafood to be delivered once they've arrived back home after their trip. The plant's ideal location enables Absolute Fresh Seafoods to purchase fish right off the fishing boats at the pier below.

Once offloaded, the fresh fish is then quickly hand-cut into restaurant-quality filets of 1 to 2 pound portions, before being vacuum-sealed and blast-frozen to guarantee freshness and quality. Strict quality control is maintained during every step of the process. Shipped by airfreight, it will arrive just as fresh as when it was originally processed at our facility.

Charter and sport fishermen will appreciate Absolute Fresh Seafoods' custom processing services. Located on the water, dockside service guaranties their catch is on ice immediately. Sport-fishing customers enjoy the convenience of flake ice for their coolers and a fresh water hose for clean up.

The Absolute Fresh Seafoods team takes the utmost care in assuring that sport-caught fish is processed exactly the same way as it does for its retail and wholesale customers, assuring the freshness and quality. Sport fishers can visit the Fish Market to add a variety of Seafood choices to their custom processed order. The friendly staff will meet you with your processed catch at the Sitka Airport at your departure time. Alaska Airlines allows up to 50 lbs per box as checked baggage.
