Crusty Ling Cod with Yogurt Dill Sauce
Serves: 4
Ingredients:
1 c. plain yogurt
1/2 tsp. dill weeds
1/2 tsp. Dijon mustard
1/2 c. chopped green pepper
1/2 c. thinly sliced green onion
2 eggs
1/2 c. fine dry bread crumbs
1/4 c. grated Parmesan cheese
1 1/2 lbs. ling cod fillets
6 tbsp. butter, butter or salad oil
Directions:
Stir together first 5 ingredients to make sauce; set aside.
Heat oven to 500 degrees F. Heat broiler pan.
Beat eggs in shallow pan to blend. On a piece of wax paper mix together crumbs and cheese. Cut fish into serving size pieces; dip in egg, then crumb mixture to coat.
Remove pan from oven. Put butter, oil or butter in pan, swirl to melt. Lay pieces of fish in pan; turn to coat with butter.
Bake 10 minutes, approximately. Serve with sauce.
